Organic Cooking: Homemade Coleslaw


Made this over the weekend for a cookout. Always a big hit, with the perfect balance of sweet and tangy.

  • 5 cups shredded organic cabbage
  • 1/2 cups almonds, toasted
  • 1 1/2 cups dried organic cranberries
  • 1/2 cup organic celery, diced
  • 1/4 cup chopped organic green onions, white and green parts
  • 1/2 cups chopped organic green bell pepper

Dressing:

  • 1/2 cup organic mayo
  • 1 tablespoon sweet organic pickle relish
  • 1 tablespoon organic honey mustard
  • 1 tablespoon raw
  • Salt and pepper

Directions

Combine cabbage, almonds, cranberries, celery, green onions, and green pepper in a large plastic bowl with a snap-on lid. Combine all dressing ingredients, adding salt and pepper to taste, and refrigerate until ready to serve. Pour dressing over slaw just before serving. Stir well.

I am not a big fan of coleslaw but with the cranberries and such added in there, I want to give this a try!

I'm making coleslaw later today! I need to use up some ingredients before my trip I love how many different variations of coleslaw there are. nom nom.

Wow this looks good! I've been using shredded cabbage a lot lately in other recipes so I will have to give this a try.
